A delicious and usually SPICY Ethiopian chicken stew. The base amounts of chili flakes and cayenne are for a medium amount of heat; definitely increase the amounts if you can handle it!
A delicious, hearty bean soup. You could easily replace the chicken stock with vegetable stock for a vegetarian meal.

This is super easy and if you take the time to really work the oil over the kale you can cut calories by only using 1 tsp oil vs. 1 Tbs like a lot of other recipes call for.
