Gluten & Dairy Free Pudding

Taken from the "Amazing Rice Pudding" recipe on SparkRecipes and converted to gluten and dairy free. Rather than rice, quinoa is used, and it makes a delicious, filling, and protein-packed breakfast or dessert.

Spicy Chicken Spinach Salad

Great if you have left over chicken from the night before or are looking for a simple, filling but healthy lunch. Recipe yields 2 servings for a side salad or 2 servings could be a full meal.

Pastrami Grilled Cheese

It's not super low in calorie, but if you were to switch out to a lower calorie bread, completely cut out the margarine and condiments, or choose a lower calorie cheese, you could probably cut 100-200 calories off of this meal.

Slow Cooker Chicken in Mandarin White Sauce with Benefiber

This concoction was put together on a Friday evening before grocery shopping. I wasn't sure if it was going to turn out to be edible, and it ended up being really tasty! It's hard for me to like chicken, but this was really filling and helped to meet all of my nutritional goals needed for the eveing.
