Baked Calico Beans
My mom always used a strip of bacon to saute the vegetables with, but I substituted pepperoni. She baked these beans with hot dogs tucked in the baking dish and corn muffins on the side. But I would use reduced fat hot dogs instead and serve a romaine and tomato salad.
