This is the best variation I've found for a low carb 'bread' - it's quick and delicious!
These cookies are very tender, fragile, a bit dry (as is most shortbread), not too sweet, and perfect with a cup of tea! Enjoy!
These are VERY chocolate and very rum! You could use vanilla syrup instead of coconut if you like :)

This is an adaptation of another delicious recipe. I subbed the brown sugar blend for turbinado sugar, and use butter instead of Benecol spread. I also increased the cinnamon from 1 tsp to 2.
