Butternut Squash Soup

You can make this as thick or as thin as you like by adding more broth.

Depending on sweetness of squash you can add a touch of maple syrup, a bit of brown sugar or I even used a 1/4 of a cup of frozen apple juice concentrate. I did not calculate any of those in the base recipe.

Baked Pumpkin Oatmeal

I've been looking for an pumpkin oatmeal recipe and decided to try this baked version. Smelled wonderful coming out of the oven.

Italian Chicken and Mushrooms

I found this crockpot recipe in the food section of our local paper and it was a big hit at our house. I think you could thicken the sauce a bit with cornstarch and it would be great over rice.

Italian Tomato Soup

This is one of those "no measurements" recipes. Use about the same quantity of zucchini and yellow squash, and regardless of the size of the pot you are using figure on the pot being about 2/3 filled with veggies before the tomatoes or V-8 juice is added. I use a 5-6 quart stockpot.
