Curry Chicken Salad

This is an amazing chicken salad that can be served on croissants, flat bread or on a bed of lettuce. None of which are included in the nutritional value. The original recipe calls for pecans and regular mayo. I lightened it up with almonds and light mayo. But I think I liked it better with the pecans and may be worth the extra calories next time :)

This is a beautiful fruit dish for a party. Best if made in a clear bowl as it is very pretty.
