Stacy's Turkey Tater Tot Casserole

My take on a scalloped potato casserole my Mom used to make when I was little. Hers was very, very fattening. This is something I fix when I'm craving comfort food.

Shrimp Scampi (my take on it)

I used a whole stick of butter but a half a stick works great

Pizza Breakfast Quiche/Casserole

This is a Pizza twist on the South Beach breakfast casseroles. These freeze and reheat great so it's a wonderful quick & healthy breakfast if you're on the go in the mornings.

Harry Potter Party Chocolate Frogs (coconut filled)

I got the recipe for the coconut filling from this site: http://www.lynnskitchenadventures.com/2010
/03/homemade-mounds-bars.html. You can put whatever filling you want in them though
This is a link to where I bought the Frog Mold but you can use any type of mold. It would affect the NI though.: http://www.amazon.com/gp/product/B000EBMUN

Guacamole w/o tomatos or onions

This is taken from Alton Brown's recipe on Food Network. Hubby doesn't like the tomatoes and onion in it so that's not calculated here. The picture has the tomatos and onion in it.

Lasagna Casserole

This is my attempt to make a lower fat/cal lasagna. I put it in here to calculate my calories.

Chicken Marsala - my take on Emeril's recipe

This is my lower fat version of Emeril's recipe. This is the link to the original that has the seasoning recipe. I think you can buy it at the store too.

Adam's Chocolate Chip Cookies of the Gods

My husband turned me on to this recipe and these cookies are AWESOME! The best part is that I can just cook one at a time if I want. We freeze them on a tray and store them in gallon size ziplock bags in the freezer. It prevents the temptation of eating the whole batch. The original recipe came from a video game instruction manual and called for 18 oz chocolate chips however here we use 12 oz chocolate and 12 oz white chocolate.

One cookie = 1 serving

Turkey Meatloaf Patties

My take on Meatloaf using ground turkey instead of beef.

Baked Oatmeal

I got this recipe from a person on Blogger

Beef Stew from the pantry

I just threw in a bunch of stuff from the pantry with some stew beef that I bought yesterday on markdown b/c it was close dated. The pics not great but just to give you an idea. I'd say each serving was about 2 cups but I didn't measure exactly. I portioned out 5 servings and there was half the soup left so that's where I got 10 servings from.

Stacy's Zatarans Jambalaya Helper

This is my kicked up version of Zatarans Jambalaya Helper

Stacy's Rice with Mirepoix

White rice made with chicken broth and mirepoix veggies. Rice is very cheap but I can't stand it plain so I make a lot of variations on this with spices, veggies, brown rice, and different broths.

Stacy's Chicken Pot Pie

Homemade Chicken Pot Pie recipe that I made up. My husband loves this, which is kinda funny because he hates preprocessed foods.

Ham and Egg Fried Rice

I got this recipe off of a card at Kroger. My stepmother used to make a similar version all the time.

Triple Chocolate Fudge Cupcakes (89 calorie, 2g fat per serving)

Betty Crocker "Lower" fat version. This will make 24 cupcakes that are 89 calories with 2g fat per cupcake
