A multi-purpose gluten free flour mixture to use. Not tree nut free, however.
This recipe is a gluten-free adaptation of "The Original Morning Glory Muffins" which appears in The Earthbound Farm Organics Cookbook - Food to Live By by Myra Goodman with Linda Holland and Pamela McKinstry
You can substitute any color of rice or quinoa to make this gorgeous (and healthful) salad, which works as a vegetarian main course or hearty side dish.
Combination of ingredients - not just for breakfast.
Personal substitutions are welcome - use your imagination as to what you have on hand.
Hearty Muffin, which can be made lower in fat by replacing a portion of eggs with whites, and oil with applesauce.
Serve warm or cold with sliced cucumbers, celery sticks, radishes and strips of bell pepper (or other choice of veggies)
Basic flax muffins can be dressed up with fruit and/or nuts, plus a selection of spices.
Just as good as traditional, but without the extra "weight" of potatoes, or fat from ground beef.
