Red Quinoa-Avocado Salad

This is a quick, easy to store salad. It's a change of pace from typical lettuce salad. A great summer time lunch or dinner! I make it in bulk for parties or to bring for my lunch.

Stuffed chicken is simple, yet impressive! This is another one of my favorite varieties. Feel free to play around with it!

Spinach, Broccoli and Tomato Pizza

This is one of my favorite pizza combos! Don't be scared off by the calorie count. The calorie count is for 1/4 of the pizza. It seems like a lot, but think about how much you'd be eating if you called up the pizzeria! I save this for one of my higher calorie meals and serve it with a salad.

For the crust, I use MIGHTYFINEWINE's whole wheat recipe. It's the best I've found.

Garlic Spinach and Horseradish Stuffed Chicken

I love stuffed chicken. It is so easy, impressive and can be as healthy as you'd like it to be! This recipe uses Cabot's Horseradish cheese. Yes, full fat cheese which I find okay in moderation. The horseradish variety gives a nice zing, but feel free to substitute whatever cheese you have on hand.

Experiment with your own stuffed chicken recipes. Use whatever you have on hand. This is just the best combo I've come up with thus far.

Taco Salad

A lighter version of Taco Salad! The Catalina Dressing mixed with taco seasoning really makes the salad! You can skip the Doritos to save on calories, but I think they're worth it.

It can be the main event or just a good side dish!
