Creamy parmesan chicken breast and mushrooms

There is a similar recipe here on SP for fish, but the ingredients in this recipe are a tad different. This is delicious, especially served with steamed broccoli and a baked sweet potato!

Marinated Tuna Burgers

We found these on the Starkist Tuna recipes site. I tweaked it to get less calories, and they turned out very well. We serve them with pasta and vegetables. Very filling and very good!

Monster Meat Balls

I felt like meatballs but did not want to spend a lot of time making them. I put all the ingredients together and baked them in muffin tins. They were good!

Hawaiian Sweet Bread

Taken from a website, but modified to be more heart healthy.

We love to eat this with spinach dip. Very yummy!

Got Chocolate? Pancake Snack

When I have a hankering for some chocolate, this is what fills my craving. It is small, but it is sooo good! My trick is not to put anything on the pancake-no butter, no syrup, no nothing and it fills me up and fills my craving!

Chicken and Fruit Salad

I felt like some vegetables. But then, I felt like some chicken. So, I put them together in this wonderful dish. It is very good. The servings are only 1/2 cup servings, but put that 1/2 cup into a pita (not included in Nutritional information), and it's very filling! My husband likes shredded cheese in his (like photo), but I did not add any cheese to the nutritional information.

Crustless Southwestern Quiche

Great and quick breakfast recipe! We love crustless quiche in our house. We serve this with a small dollop of sour cream (which is not in the calorie count here), and toast. Delicious!

Morning Quiche

We enjoy having a good breakfast on the weekends, and this quiche fits the bill! You can add vegetables as you wish, as well as different spices. This dish is extremely versatile. We like it served with homemade whole wheat toast.

Homemade Modified Pico de Gallo

This is a modified version of pico de gallo. We don't like cilantro much, and did not use lemons or lemon juice. My husband absolutely loved this, so we have been using it as a topping on nearly everything! We used it on top of grilled chicken and rice and then scrambled eggs for breakfast. This is fantastic after sitting together in the fridge over night (the flavors just meld...so good!)

Awesome Mixed Salad

I just threw a bunch of veggies together and added some Light Balsamic Vinaigrette dressing on top. It went well with our hamburgers (no buns or cheese), light potato salad, and light deviled eggs. Oh so good!

Picnic Potato Salad

Awesome and light potato salad, great for picnics! Just don't forget to keep it chilled and out of the sun!
