Southwest Chicken Fajita Salad
I had a salad close to this at a restaraunt here, they buried it in cheese, I have recreated it using less cheese.

I tried this at my favorite mexican place, I left out the white Salsa Con Queso, but this mix is great on whole wheat tortillas with lettuce, as well served over a over a bed of rice.
