Quick, easy to make squares that keep for ages. Can be frozen with no deterioration in quality. This, along with some fruit, is a great snack for kids after school.
This is a great way to clean out your refrigerator with those small amounts of food that need to be used up. Simple, quick, easy, and delicious. Add or delete any veggies you have or like to include.
Got this recipe from Anna Olson on Food Network Canada. As I did not have blueberries on hand, I used frozen raspberries instead and it turned out really well. The original recipe called for white sugar, but I substituted brown. Next time I will use some whole wheat flour instead of all white. Another substitution could be applesauce instead of the oil.
This is an oatmeal/chocolate chip cookie recipe that I have adapted to be diabetic friendly. I substituted Splenda and Brown Splenda for the sugars. One could also sue carob chips instead of chocolate chips, but I didn't have any on hand. 2 cookies count for about 100 calories and 15 g of carbs.
A delicious version of the old favourite. Could be lightened up and made healthier by using flank steak, olive oil, and light sour cream.
