Festival bean soup

Nutritious and filling.
More than 30 years ago, at the Reading Rock and Jazz Festival, I bought a bowl of vegetarian bean soup from one of the stalls. It was the most delicious soup I had ever tasted. Over the years I have tried to create a recipe that stands up to my memories and would like to share it with you here.
In addition to the preparation and cooking time you will need to allow time to soak the beans.
Although I have added this to the Appetizers and Soups category, this is really a [light] meal in itself.
The name has a double meaning: the word 'Festival' is a reminder of the inspiration for this soup and also refers to the colourful beans which look so festive in themselves!

You could easily halve the quantities to make a six serving pot of soup.

Delia's Strawberry and vanilla pavlova

This is the Delia Pavlova which was recently featured in Waitrose TV advertisements. Although the recipe had basic nutritional info, I decided to use Spark recipe calculator for more informed details.
Delia writes:
''Meringue can be tricky if you donít have the right recipe, but dead easy if you do! What weíre aiming for here is light as a whisper on the outside and soft and chewy within. Itís my belief that the secret of a successful meringue of any sort is to let them dry out completely, which is what this method does perfectly. Itís a given that this is one of the great desserts of all time.'' Delia

Almond Loaf [savoury]

A favourite in our [vegetarian] family.
We eat this loaf with all the trimmings associated with a roast meal.
It is one of our our vegetarian replacements for white meat.

This loaf is also delicious eaten cold. It can be sliced thinly and eaten with salad or used as a sandwich filling.

The picture shows a vegetarian loaf ring in which I have used both the Almond Loaf recipe and the Nut Loaf recipe, cooking the two together in a bundt ring.

Nut Loaf

I got this recipe from my mum.
She will often cook this for us when we visit, but doubles the quanities since there will be 8 vegetarians eating. She serves it with cranberry jelly, two vegetables, roast potatoes and gravy. My children love this recipe.
We are a vegetarian family and this is our vegetarian replacement for dark meat when having a roast dinner.

Pesto Light

This recipe produced 240g of Pesto.
A heaped tsp weighed 10g, so the recipe produces 24 x 10g servings.
This is enough to dress 45g of wholewheat spaghetti.
