Start you morning with a delicious burrito that is filling and packed with protein. Make the quinoa ahead of time and you've got a quick and easy breakfast on the go! Feel free to add any other toppings, such as vegan cheese/ sour cream, avacado, green onions, pico de gallo, etc.
Growing up, my favorite dish that my mom made was her famous Mexican Casserole. Unfortunately, it's ingredients include ground beef and cheese, so this recipe is my attempt to make it vegan. It of course does not taste the same, but it does the trick when I'm really craving it!

Impress your friends by making your pizza dough from scratch! This is a basic dough that can be divided to make four small- medium size pizzas. The dough can also be frozen and thawed later (so you don't have to spend four hours everytime you make pizza!)
Easy, tasty, and filling! Great salad to make for the week- you can take it to work for lunch or pull it out for a quick snack! Great side for parties to!
