Secret Family Recipe Cookies

This recipe has been trickling through my family for years; one of my uncles fell on hard times a while ago and since he was a real whiz in the kitchen, he decided to bake cookies for extra money. Selling these AMAZING cookies to office workers, he made enough money to get his life back on track! I just had to add this recipe to SP to find out how guilty (or guilt-free!) these cookies are. I have not at all "healthied up" the recipe but they are just S-O-O-O good, you have to make room for butter sometimes!

GREAT low-cal option to mashed potatoes! Honestly, prepared this way I prefer them to the classic mashed potatoes! Very rich, delicious, and guilt-free! Also, easy side dish when you're cooking for one.

Eggplant Parmesan

Yummy!! Wonderful directions for preparing eggplant if you've never done it before. The eggplant is layered in a large pan with marinara sauce, mozzarella, ricotta, and parmesan cheese. Then it's baked until the cheese topping is golden :).
