This Recipe is the same as Chrystal's Magic Taco salad except The Chips were not figured in as a part of it so that it leaves you the freedom to choose whatever kind of chips you desire. Just don't forget to add them to your daily nutrition log.

In my previous recipe for lower cholesterol eggs, I felt that there was too much fat used and that it was too big of a recipe and decided to break it down to make it easier for anyone who is not cooking for a lot of people.....Enjoy!
The Mashed potatoes turn out so smooth
This is a healthier modification to a previous recipe. It is very Good and you don't even miss the beef. In this version, I have taken out the chips that I normally use with the salad and made them optional. It is great with or without the chips.
These Scrambled Eggs taste just as good if not better than regular scrambled eggs. It is much cheaper also if you are watching your cholesterol to use this recipe than to buy an egg substitute.
Tastes as good as the regular Macaroni and Cheese if not better, it cuts out a lot of fat naturally. I snuck this lighter recipe on my family and they didn't notice that it was light.
If you love the taste of a western Omelet You will love this, You can add shredded cheese to this if you want. I have made this dish with and without cheese and it tastes great either way. You may also substitute Bacon Pieces for sausage. This recipe can easily be adjusted for more servings you may also find it desirable to adjust the amount of veggies used depending on your taste.
I make this Taco Salad at almost every church function and at various family gatherings and everybody begs me to make it again and again. It doesn't call for beans because there are some people that can't have them ... and I don't like them but you may add beans if you so choose.
