My attempt to make this wonderful soup fit into my weight watchers program without losing the flavors I so love. I use full-fat products when it comes to cheese, as I personally feel the flavor is better.
A recipe from the early 1900's brought into the 21st Century...and it's easy as pie!
Living near a Garden Fresh market, where they sell "day old" vegetables...I found myself needing to use up some of the 15 red, orange and yellow peppers I had purchased (for less than $3), as space in the freezer was dwindling. I killed two birds with one stone with this recipe, as I used the remnants of a 4 pound package of broccoli that had seen better days, as well as the red pepper. This soup will definitely assist in getting your vegetables for the day!
Not your average summer salad, this is a healthy take on a much higher calorie version served long ago at the Heidel House in Green Lake, WI. It works well instead of coleslaw or potato salad at a cookout or picnic.
