A whole grain salad to be served cold with greens as a first course or a whole meal. What makes this dish is the combination of wheat berries, feta and olives. Try your own combinations of vegetable like celery, scallions and tomatoes.
You can vary this recipe based on what veggies you have on hand. It's equally wonderful with a little Sesame vinaigrette or peanut sauce but excellent and warming all on it's own. Serve as a warm salad, or a side dish with ginger poached salmon.
