The 3-2-1 refers to the proportions and cooking time. 3 T of mix, 2 T. water and one minute in the microwave.

Norma's Vinaigrette

I got this recipe from a friend in Buenos Aires and have adapted it to suite my taste. Vinegar and I don't get along, but the honey in this recipe tempers the vinegar for me. Still, I cut it in half to get it right for my tastes. The recipe above reflects the higher amount for "normal" folks! Obviously seasonings can be substituted to reflect your taste.

Pumpkin Pie Pudding

A traditional cooked pudding. Tastes like a Holiday pumpkin pie but without the crust.

So-Good Sausage Gravy 'n Muffin

I copied this from Hungry Girl. I calculated using lactose free milk and Eagle Mills supergrain flour as that is what I use. Obviously you can use whatever you have on hand.

I got this from a EZine to which I subscribe. A nice take on cooked cabbage.

Southern Cornbread, Martha White recipe

A similar recipe is posted however the calorie count is way off.
This recipe used lactose free milk and a whole egg. I made 12 cupcake size muffins.

Rolo Pretzel Candy

The hardest part of this recipe is unwrapping the Rolos! The recipe is for one piece. Obviously you will make more than one. The question that begs to be asked is "Can you eat just one?"! So easy, and folks fall all over them.

Appalachian Cabbage Pudding

This dish can be a meal or a side dish for chicken, turkey or a pork roast along with roasted potatoes. It appeared in the local paper in Fred Thompson's column. This is definitely Peasant food, which takes me back to my childhood! I can see myself making a meal of this and lovin' every bite!

Almond Puff

I got this recipe from a daily recipe E-zine I get. You'll notice that the first 2 layers of this dessert contain NO SUGAR! Only the glaze has any sugar. It is a wonderful dessert and will make you look like a professional baker! Thanks for sharing JoAnn!

Cherry Clafouti

Traditionally, Cherry Clafouti is made using fruit that hasnít been pitted. Clafouti aficionados claim (and I believe them) that as the cherries bake, the pits give off a sexy, sensual scent that is missing from the pitted version. The choice is yours. If baked with the Clafouti they easily come out with a little push of the fork. Just warn your guests!

Zucchini with Carrots and Spinach

I had an abundance of fresh veggies and wanted to get them cooked up. This was quick and easy and oh, so good! Made it again the next night 'cause it was so tasty.

Candida Diet Beef and Cabbage mix

Low carb, suitable for Candida diet. If you have been told that yeast is taking over your body and have been condemned to follow the Candida diet, this is a recipe you can "feast" on. Hopefully your sentence will not last more than a month or so!

Beef Heart with Mushrooms

I spent a month in Italy in 1968 and this recipe came from Ada Boni's Talismano della Felicita, "which is universally recognized in Italy as the standard national cookbook". Despite the weirdness of eating heart, it is a wonderful dish. Heart can often be found in Mexican markets.

Black Bean & Corn Salad

A wonderful recipe. It gets better the longer it sits. I use a combination of red, green and yellow peppers, about 1/3 of each and the salad just pops with color. If you only use one color, I'd go with red.
