Quick and Simple Granola

Quick, easy, and tasty. I used a combo of fresh ground allspice/nutmeg/clove, not pumpkin pie spice, but it works out about the same. There is no oil/butter in this recipe, unlike most, because I generally always eat my granola with yogurt, which adds moisture.

Classic Meatloaf

Standard Meatloaf flavor, but cut with mushrooms to make a bit healthier.

Sweet Spicy Thai Chicken Filling

Sweet and spicy ground chicken. Would be great with any meat or mushroom mixture. Great with stir fried veg/rice, or in a tortilla. Has a nice, but edible, heat level, but if you have kids, you may want to scale the chili garlic sauce back a bit.

Caprese & Zucchini Quinoa

Light and tasty filling salad. Serve as a filling but light lunch, or as a side. Calculated as lunch portion (1 cup).

Can save 93 calories per portion by not adding cheese, and still tastes great!!

Spicy Garden Fresh Chicken Ragout - Lighter Version

This is the same great dish, but served as lettuce wraps!!!

Fresh spicy tomato sauce over braised chicken, crisp lettuce, and sauteed vegetables. This is a great fresh, filling dinner. Would also be delicious over brown rice, or light tortillas!!!

I did not measure salt and pepper, just use what you need.
