another of my quick hot lunches
Cucumbers, tomatoes, bread.
This is one of my favorite tuna salads.
I like it and its easy to get prep.
A complete dinner. Feel free to change the veggie, add spices or substitute chicken for the beef tips.
I was trying to figure out what to do with the sun dried tomatoes my youngest picked out at the store today and this is what i came up with. Hope you like it.
I usually just go thru the fridge and grab all the leftover veggies and toss it in. I always use the cream style corn though, it makes it creamy with out all the calories of heavy cream.

Not bad for my first attempt at making a better cookie. I changed the butter to applesauce from the original recipe that I had.
Very kid friendly.
A kid pleasing (my kids under 5 ate them) veggie mexican pizza that is done in under 20 minutes!
Please note that the Carb count comes mainly from the beans. The beans and the tortilla combine to make complete proteins needed for a vegetarian diet.
You also can't beat 12 grams of fiber in one serving either!
Still uses chicken and mushrooms, but replaced the Marsala wine with cider vinegar and chicken stock
(didn't feel like removing the removes this time)
There is some ground beef and and egg.
Mostly veggies with some Hamburger thrown in.
Shredded chicken with apples, onions, and balsamic vinaigrette. I usually add some cherry tomatoes or cucumbers and carrots as well.
This is a great soup to make when you have little time, but still want something homemade. Great when paired with a side salad and crusty bread.
