An easy delicious Mexican-inspired casserole, perfect for a weeknight meal. The whole family will love it!
This is a lightened-up version of huevos rancheros that I often prepare for my family on weekends. Poaching the eggs is a great way to cut down on added fat and this method of poaching produces a soft, fluffy white and a nice runny yolk. I often serve it with a tropical fruit salad (mango, papaya, pineapple, etc) Give it a try!
Now of course these are not as good as "real" cupcakes, but if you are trying to watch what you eat but need that chocolate cake fix, these will do the trick! I like to whip up fat free topping or low fat chocolate mousse to use as icing! Give them a try! Variations would be to add cinnamon for a mexican flavour or shredded carrots for some extra fibre!
Just a simple egg salad recipe using fat-free miracle whip instead of regular mayonaise. It's delicious on a sandwich for lunch or a single piece of toast for breakfast!
A delicious and easy side dish to spice up a weekday meal!
