this is a healthier variation of a really good southern bar-b-que. I substitute chicken breast for thighs to make it more lean. Serve with cole slaw sweetened with greek yogurt, splenda and rice vinegar and skip the bun. Mmm mmm.
Tonight I'm stuffing the end of a huge zuchinni that was hiding in my garden. It was the size of a club! I'm staying away from egg and bread crumbs, so it will be saucier than usual, but the mozzerella cheese should hold it together a bit.
Oh, yum! My family loves this! I use an artificial sweetener and almonds instead of ramen noodles to make it suitable for my weight maintenance needs. I double the dressing but you can lower sodium or fat if desired by cutting half the salt or oil.

I have had this recipe forever. It's been with me through many healthy meals. The carrots and zuchinni are shred finely so they are hidden from suspicious eyes. Great with monterey jack or parmesean cheese and some fresh green chili or jalapeno on top.
