This is a GREAT meal for a weeknight when you don't have a lot of time or energy but still want a real meal (i.e. not chicken nuggets!)

We first had this at a GS camp out with Fritos and cheese. It is also delicious (and more healthy) by itself.

Ranchero supper

This is an easy meal to throw together on a weeknight and is very casual as it can be scooped up with corn chips, wrapped in a soft tortilla, or just eaten alone. My kids all love it.

Homemade breakast sandwich

This provides a heart start to my day that lasts me until lunch time. I use a whole egg because egg whites just don't "hold me over" long enough.

Chicken and cheese quesadillas

This is a kid-friendly recipe that is easy for the tiniest of fingers to pick up. It does take awhile if you don't have the chicken cooked and shredded already. If prepared the night before, these would be an easy weeknight meal. Just take the assembled quesadillas out of the fridge and brown them in a little grease.

Mint Brownie Pie

This is from the 2000 Annual Taste of Home collection, p. 146. My family loves it and it is a hit wherever I take it.
