Japanese Okonomiyaki

Okonomi stands for "what you wish" so use this recipe as base and throw in whatever you can get your hands on! Substitute vegetables/ meat or even flour if you can't find the Showa brand!

Makes 4 small pancakes or 3 large.

Three Cheese Vegetable Lasagne

Simple, quick, healthy and undeniably yummy! What's better? If you shred the carrots and zucchini up the kids probably won't even know they're there! Add mince if you need the protein.

Lamb and Chickpea Tagine

Serve on a bed of couscous! I find this dish is great for using up those leftover veges! Just don't forget to add the calories in!

Traditional Pancakes

Sometimes a rainy family day calls for an old-fashioned brunch of pancakes. Serve with berry compote or maple syrup and bacon.

Beef and Mushroom Casserole

Slow cooked to perfection! You can also replace the potato topping with pastry to create a pie but it greatly increases the calorie count.

Zucchini Slice

Great for a easy weekday night dinner or a tasty picnic snack. I've used tasty cheese but use Light Tasty if you have it! You can also substitute the bacon with more mushrooms for a yummy vegetarian alternative.

Tuna Spinach Mornay Pie with Mash

Adapted from the AWW 1000 Best- I've cut the butter and used low fat milk to lower the calories. Great for those chilly winter nights when all you want is good wholesome food.

Simple Curried Sausages

This is one of mum's staple meals that gets brought out for cold winter nights or after late night training. Its so quick and versatile- just throw in any leftover vege you have lying around.
Serve with mashed potato or a polenta square but don't forget to add the extra calories!
