Jen's Healthy Heirloom Stuffing

This is a healthy variation of Grandpa's stuffing that we used to have every Thanksgiving. If you cook the stuffing inside of a bird (or in a pan under chicken pieces), omit the chicken broth.

Jen's Chicken Enchiladas

Smoky, mildly spicy shredded chicken wrapped in tortillas, smothered with sauce and cheese. Serve with sour cream or, my favorite, fresh guacamole. This recipe makes two pans because in our house, one is never enough!
