Yummy, spicy, crunchy not-your-average tuna salad to go between high fiber bread slices or on pasta or quinoa
I make a huge batch of these, eat some and freeze some. The recipe could certainly be cut in half. Also, I like my peppers a bit crunchy, so some might want to increase cook time
Can be filled with sweet or savory ingredients. I like reduced fat ricotta and low sugar apricot jam. Also good with steamed asparigus & chicken with parmasian cheese
Gluten free indulgence. I allow myself one serving as a snack, once a day. When I make a whole one, I give half away to a friend who has celiac to reduce my tempation. I often reduce the amount of sugar in my recipes, too, thus reducing the carbs somewhat.
