This is a mixture of quinoa and chopped vegetables with lemon juice as a dressing. I eat this as a healthy filling lunch or snack.
I add black or kidney beans for added fiber, but they are not figured in the calories, so I add them after I measure my portion and calculate them seperately.

Serving size is 1/2 cup.
This is a large recipe I make for my church gatherings. Makes 48 - 1/2 cup servings for a total of 24 cups.
This is a basic salad recipe that can be changed to make it lower in calories and fat. I put it in as I always made it before my weight loss journey began.
These are not a weight friendly cookie but they are very good and simple to make. I make them with my granddaughter. They are so chocolately I'm ok with eating just 1.
