S'more-esque "Campfire" Marshmallow Frozen Yogurt

A frozen dessert that will take you back to campfire sing-alongs.

I used this to make S'more Ice Cream Sandwiches, recipe coming up shortly!

I found a recipe here on Spark submitted by ELAINEHN that sounded really good, except the dressing (for me I don't really like super-creamy dressings and with buttermilk AND mayo in it it would have been too much). So I set out to create my own version and I LOVE what I came up with!

Black Bean and Salsa Dip (failed Hummus attempt)

Really yummy with tortilla chips and especially Kashi Heart to Heart grain crackers in Roasted Garlic flavor

Whole Wheat & Flax Chocolate Chip Muffins (with applesauce)

Yummy and Healthy! (This recipe modified from my original recipe with canola oil... has 50 less calories and 6 less fat grams)

These are a little high in fat, but it does have GOOD fats in it. If you want to save yourself about half the fat, use applesauce instead of oil. You will reduced the calories by 50 calories, and you will save yourself 6 grams of fat. (I was using a base recipe for muffins and adding my own additions, i.e. flaxseed and whole wheat flour instead of refined, so I kept some of the ingredients the same.)

In fact, I'm adding this recipe twice, again with applesauce in the ingredients, for the next time I try this recipe. So if you want to use applesauce instead of canola oil, see my recipes.

Delicious Fruit Smoothie

Note, keep all fruit frozen. It acts as the ice and doesn't water down your smoothie! You can add protein powder to make it a meal. You can also add your favorite fat-free vanilla yogurt to make extra creamy!

Summer Chickpea Salad (rendition of Mr. Oliver's)

A rendition of Jamie Oliver's classic salad from his book Jamie's Dinners. Beefed up with broccoli, pine nuts, and romaine to feed 12 people. Also, tomatoes and peppers were omitted to accommodate for a deadly allergy.

Mini Meat Loaves

Very Easy. Very LOW FAT! VERY TASTY!!!! Tender and juicy. You can even sneak in some grated carrots to hide some extra veggies in here if you have kids who aren't "into" their veggies!

A low-fat way to make some quality comfort food. Pair with mashed potatoes (or corn on the cob) and green beans and your favorite beer!

Great pizza with whole wheat flour! Lots of protein!
