Found these delicious whole wheat tortillas at my favorite bakery (Dunford Bakers) I eat them with most of my meals.
This recipe is a quick fix for me when I'm out running around doing errands and have no time to fix a meal. Serve with your favorite salad and make it a meal.
Instead of using Lard which the original recipe calls for I use vegetable shortening, You can also use Olive Oil (my favorite way)
16 oz Chicken Breast (boneless skinless)
4 Medium Ears fresh Corn
48 oz Chicken Broth 100% fat free 33% less sodium(swanson)
1 small Bell Pepper chopped (1/2 C. divided)
1 1/2 Cup Skim Milk (Over The Moon Brand)
2 C Instant Mashed Potato Flakes (Idaho Spuds brand)
Salt & Pepper to taste
Crushed Red Pepper flakes to taste (optional)
Instead of the full fat Cheddar Cheese Cubes I use 1/2 Cup Shredded Fat Free Cheddar Cheese. feel free to use low fat Italian Dressing.
1/2 cup of this salad is 2 Weight Watcher Points
My version of Fish Tacos, I didn't have shredded cabbage so I used iceburg lettuce and they were so good anyway.
6 Weight Watcher Points for 2 tacos
This dressing is made without oil. Got it from my Weight Watcher Cookbook.
You can also spread it on grilled chicken sandwich or mix some into fresh potato salad to replace some of the mayonnaise.

This delicious Mango Jicama Salad (Or Salsa) Kicks up the flavor to my Salmon dinner. I got the Idea after reading the Salsa Article.
1/3 Cup is 0 Weight Watcher Point and 1 veggie or fruit serving.
I make my own secret recipe for the salsa.
You can use Ground Turkey meat also, But I'm a Beef lover so I use Black Angus Ground meat. 97 % FAT FREE
I Bought the Tortillas from Mexico online only 1 Weight Watcher Point for 2 tortillas. You can use your favorite Corn high fiber tortillas for this recipe but you might have to calculate the Point Value (calories) in for your substitutions.
Only 6 Weight Watcher Points for my version.
Each tamale has 3 Weight Watcher Points.
I prepare my turkey by boiling it in seasoned water, salt pepper celery carrot onion.(save the broth) cool and shred the turkey when cool.
Times are aproxamate.
This is good when you have leftover Turkey from a Turkey Dinner. I boil the Carcass from a Jenny-O Turkey Breast and discard the bones and skin. Save the meat for the soup, refrigerate. Then I put the broth in a container and refrigerate overnight. Skim off the fat the next day. This is my Turkey Broth. I had issues with SP ingredient list so I put in 99% chicken broth instead for my ingredient list. I think its the same amout of calories ???
Vegetable oil may be used in place of lard, but the beans will not have the same authentic flavor. 240 minutes cooking time is 4 hours.

I got this Recipe from My Mom many many years ago. She used white flour. I use whole wheat. This will be a favorite Recipe if you grow your own Tomatoes and peppers.
I caculated the Weight Watchers Points on this recipe and its only 3 points per serving.
Did not incude any toppings so if you add toppings calculate the points into the recipe.
The prep time and cooking time is aprox. since its been a couple years since I made this recipe.
This is my version of a Greek Pita it has 8 Weight Watcher Points (half a sandwich is very filling 4 points) Serve with your favorite salad or soup and you have a nice meal.
I found this recipe on the Quaker Quick Barley Box. Can use Lean Ground Turkey instead of lean ground beef. I had issues with SP ingredient list so they will be modified in the actual recipe shown

Weight Watchers Recipe Each Sandwich is 4 Weight Watcher Points.

I got this recipe out of a Weight Watchers Magazine The Point Value is 3 points per serving. I modified it from 1% milk to Skim Milk but after looking at the nutrition al info ont SP it has the same points as if I would make it with 1% milk.
