Recipes I've Shared:
This is a half recipe adaptation of the Blueberry French Toast Casserole recipe at thegraciouspantry.com.
These are basically a muffin with a bit of cream cheese frosting on top as a bonus. These things are sinful, so be careful. Great for enjoying in the fall as a special treat. Recipe (except for frosting) comes from annies-eats.com.
Crunchy, spiced granola that is great for topping fruit or yougurt, or as a stand-alone cereal. Adapted from twopeasandtheripod.com. FYI, this baking in your kitchen makes your house smell wonderful!
The name says it all. Taken from fortheloveofcooking.com.
Adapted from Skinnytaste.com. Fresh salad that's good for a side dish or a light dinner. Its also great when served with corn chips as a dip.
Taken from America's Test Kitchen. I halved the recipe but added the full amount of romaine. This is absolutely delicious, especially when eaten with pita bread and hummus.
This is a recipe I made using fresh cherries, yogurt, and low-fat ice cream. These make a great summertime treat.
This stroganoff has a rich, creamy sauce that's great for a light dinner.
Overnight oats, with the great taste of strawberry banana. A quick, easy breakfast for the person on the go.
This is a tuna mac recipe I adapted from Skinny Taste's "Lighter Baked Macaroni and Cheese." I added tuna, peas, and mushrooms. It came out wonderfully.
Similar to the recipe for butternut squash black bean chili, only the spices are curry, cinnamon, and nutmeg rather than chili powder and cumin. Packed with vitamin A, its great for a cold winter night.
This is a fantastic granola recipe from Angela at ohsheglows.com (I omitted 1/2 c sesame seeds from the dry mix due to allergy). You can get creative and change up the add-ins if you wish.
This recipe makes one serving of a delicious, ready to eat breakfast.
This recipe is super easy. Got the idea from the recipe "Super Easy Pumpkin Muffins." I just made a separate recipe to get the nutritionals.
This makes a quick, easy, and tasty breakfast. You can get the calories under 400 by omitting the extra rolled oats or flax, if you like. I like to eat this on a day I know I'll be out and might miss my morning snack.
I've divided the recipe in half to only make one serving. I added frozen banana to the recipe and used 1/4 cup yogurt rather than 3 oz. As a result, nutritional values reflect these changes.
This is SG's recipe, but I've omitted the following ingredients from the nutritional info (I've entered pumpkin butter separately):
1-1/2 cups pumpkin butter (2 T in each crepe), warmed
fat free whipped topping (optional)
powdered sugar (optional)
This is for 1/2 the recipe. I used an apple cider drink mix b/c its what I had on hand. Real apple cider may increase the nutritional values, as my mix was sugar-free. I added allspice and clove and it enhanced the flavor, so I'm adding it here. SG's recipe doesn't include those two items.
Recipe called "Vegetarian Chili" in Good Housekeeping's "Favorite Recipes Vegetarian Meals." Left out jalepeno chilies, used 1.5 cups broth instead of only 1, and 2 T oil instead of 4 tsp. Other than that, recpie is same as printed. My directions are simplified.
A lighter version of the potato soup I used to make. Its an easy to make recipe that's great for a cool weather dinner. Makes plenty so you can freeze it and eat it later!
Something I threw together for dinner. I wanted to use portabella caps but the store was out of them.
A healthier, vegetarian version of the classic. Its not as satisfying as the original, but it comes close. Great with hot biscuits!
This is a recipe I came up with on a night I had some asparagus I needed to use. I have to say that it turned out pretty good, as the Laughing Cow cheese gave it some nice creaminess. I'll be making this again. Feel free to use real swiss or even goat cheese if you like.
This recipe can be divided in half so you can eat some now and some later. Its very yummy and good for you, too!
Blueberry panckaes, but just a little bit lighter version. Delicious and quick!
This recipe is for a vegetarian chili using low or reduced sodium ingredients. I've tried to reduce the sodium as much as I could without cooking everything from scratch. Its quick and easy to make and tastes pretty good, too. It has a bit of sweetness to it because of the brown sugar, but you can reduce that if you like. Its great with shredded cheese (optional) and a dollop of light sour cream. Enjoy!
Tuna casserole "like Mama used to make," only a lighter, more veggie-dense version.
I got the idea for this recipe from the Hungry Girl Oreo Cheesecake for One recipe. I think it comes close enough to satisfy if you're craving strawberry cheesecake. Its a little high in calories but way lower than a real piece of cheesecake! Hope you enjoy!
