This is a wonderful filling meal. The original recipe calls for the addition of pasta, but my children like spaetzle, a homemade noodle, so that is what I have included here. Spaetzle also freezes well, and will hold up in the soup without absorbing all the broth.
This is my favorite way to use up leftover spaghetti. In fact, I usually make extra just so I can make a pancake! It makes a quick and portable breakfast. My recipe is an adaptation from the one in The Good Food Book by Jane Brody. In the summertime, when I have lots of fresh herbs growing, I use tons of fresh basil in the pancake. Recipe makes 4 healthy servings.
Wow! I modified this recipe from Hungry Girl Apples & Oatmeal because I had a bunch of peaches going bad in my fridge. Awesome. So good it could be a dessert instead of breakfast!
Salads are great at this time of year, and this one is easy to make, full of flavor and very filling!
Easy and quick to make. Very filling! Great for eating on the run breakfast if you skip the salsa.
This is a great summer dinner, and leftovers keep well for 2-3 days for lunch (if it lasts that long) Even my children love it.
Very filling. Will last in fridge for several days. Great during the summer for lunch or light supper! Serving size (for nutritional purposes) is approximately one cup.
This is my families favorite dessert. Every year we go blueberry picking and I will make one of these several nights a week until we run out!
