I came up with this recipe because I was looking for a light moist banana bread. I took several banana cake and banana bread recipes and modified them to give me this recipe. It's made with Splenda but a bit of molasses and cocoa powder is added for flavour (both are optional, but are included in nutritional information calculations).
So this is a recipe I figured out so that I could have Mac N'Cheese without unnecessary fat. It's a great alternative to homemade Mac N'Cheese. I found making the sauce this way easier and more foolproof than on the stovetop. It was easier to prevent lumps in the sauce and it was much faster! Because I am usually cooking for one I am often making up recipes just for one person. So this is a meal just for one person, but if it's for a family it's just a matter of increasing the portions as needed.
This is a nice alternative to the usual morning bowl of oatmeal. It makes a soft breakfast square. I usually eat it slightly warmed up with a bit of milk.
The caramel, chocolate and touch of salt with the crackers made these a huge hit with the gang. The calorie count is low -- if you can stick to just one serving. It reminds me of a homemade chocolate bar.
This is a recipe I came up with as an alternative to the greasy fried rice that's available in restaurants. The flavour is similar, but without the unnecessary fat. This is a decent recipe for one, but for a family you can multiply it as many times as you need to.
