Where I come from we don't thicken our chowder with flour. We like it only slightly thickened, not pasty. This recipe uses the natural starches in the potatoes to slightly thicken the chowder. Be sure to use starchy potatoes, such as russets or other baking potatoes.
My favorite broccoli soup. Originally found in a Jane Brody cookbook, I forget which one. Not my recipe but I needed to know nutrition info.
