Mean Black Bean Soup

from the Rotel Tomatoes label. Makes approximately 10 servings, 1 cup each.

Pumpkin zucchini smoothie

I made this with whole milk (on hand for my kids) since my skim milk had soured. Adds only a small amount of fat, since only 1/2 cup is used in the entire recipe. What a great way to get some veggies into my kids...they loved it! (I serve up 1/2 for me and then split the other half between their two sippy cups, and cut the thickness with additional milk for them)

Stuffed Broiled Portabella Mushrooms (modified with Quinoa)

Variation of Chef Meg's Recipe, with quinoa added to the filling.

Vegetarian Stuffed Peppers

A delicious low-cal main course that the whole family will love! Serve with a green salad and steamed veggies.

Blueberry Scones

Traditional Buttermilk Scone recipe, lightened up with use of smartbalance butter blend instead of real butter. Can leave out the blueberries and substitute any other fruit, raisins, etc.

SOOOO good!

5 minute chocolate mug cake

This is a great little snack, made in a coffee mug in your microwave...and you get to eat the WHOLE thing! :)

Rattlesnake dip

This spicy cream cheese dip can be made with fat free cream cheese, and with all the other ingredients, no one will ever suspect that it's actually good for you!
