Standard recipe, lightened up...with the added goodness of whole wheat flour, wheat germ, oats and raisins!
A fast go-to meal that's healthy and hearty and sure to please everyone. Makes 9 generous servings...1.5 cups each!
This recipe uses low-sodium canned beans for convenience when you don't have time to soak them yourself, and frozen Boca Burger Crumbles. It's ready in 15 minutes, flat, but like all Chili, tastes better the longer it cooks.
This "crustless" version of pumpkin pie is served up in individual cupcake liners, with a vanilla wafer in the bottom for "crust".

I made this with whole milk (on hand for my kids) since my skim milk had soured. Adds only a small amount of fat, since only 1/2 cup is used in the entire recipe. What a great way to get some veggies into my kids...they loved it! (I serve up 1/2 for me and then split the other half between their two sippy cups, and cut the thickness with additional milk for them)
Variation of Chef Meg's Recipe, with quinoa added to the filling.

Traditional Buttermilk Scone recipe, lightened up with use of smartbalance butter blend instead of real butter. Can leave out the blueberries and substitute any other fruit, raisins, etc.
