I picked a fresh eggplant from my garden but didn't have the ingredients for regular eggplant Parmesan so I made up a recipe with what I had in the frig. Come out tasty and fairly healthy. Adjust amounts to your own taste. The measurements here are approximate.
Great for camping and picnics, very simple. Meat eaters have eaten it and not known it wasn't meat!
I buy a chili mix made of Texturized Vegetable Protein with Chili Seasonings already added from my local natural foods store.
Instead of that, I've also used plain texturized vegetable protein (TVP), about 0.6 lb., and added my own spices - cayenne pepper, onions, carrots, tomatoes, chili beans, salt & pepper or some combination of what's in my garden. Your favorite chili spice mixture would work too.
Most requested salad recipe for picnics by friends and family.
Even for people who don't like veggies try it after everyone raves.
