Recipes I've Shared:

Parmesan Frittata (from Mark Bittman's "Food Matters")

I don't like eggs very much, but when beaten with the parmesan, it loses a bit of the eggy omelet taste. SO GOOD and will keep you full all morning!
The real recipe doesn't specify the vegetables to use, but I think these taste best. Potatoes, red bell peppers, tomatoes, and corn all work well in this, too!
(picture shows tomatoes, but these are not necessary)

Banana Bread (sweetened with honey)

This recipe uses spelt and all-purpose flour. SO MOIST!

Banana Mango Colada Smoothie (yes, for breakfast!)

This is perfect to put in a travel mug & enjoy on the way to work on a hot summer day.

It was inspired by the banana frozen drink I had at the Hyatt in Maui.

Substituting fresh pineapple & mango for frozen is optional, but using frozen forgoes the need to crush ice.

Add some rum, and you have a killer cocktail!
