Sara Moulton recipe for cheap healthy dinners. I've reduced the oil called for to lighten it up some, and reduced the amount of pasta to 12 oz from 1 lb originally called for.
Serve on warmed corn tortillas with a sprinkle of Queso Fresco, and a skinny margarita on the side.
Convert the liver hater in your family with this easy, flavorful recipe.
Fresh baby spinach leaves topped with a grilled chicken breast, fresh blueberries, blue cheese and toasted walnuts.
This version uses garlic mashed potatoes flavored with mustard, corned beef (either leftover or deli-style) kraut, swiss and caraway. Serve with a big slice of buttered pumpernickle bread on the side - it's just like a reuben sandwich only a lot lighter on calories!
Adapted from Betty Crocker website recipe.

Uses left-over pot roast and veggies in individual ramekins. I split between 2 Corningware 24oz capacity bowls. Thin pie crust on top only lightens up the calories, but it's still a hearty comfort classic, and a huge all-in-one meal. For fewer calories, you could cut back on filling ingredients as this version makes heaping bowls full. Or just eat half and save half for later.
