I created this recipe wanting to get in more veggies since I have a pregnancy aversion to lettuce right now. You can barely taste the lettuce but are getting between 3 and 4 servings of veggies depending on how much lettuce you use!
Cumin is the chief flavoring in this guacamole!
Our family uses alot of Clif Bars on our Mountain Bike adventures and at the bike races. I've been trying for the longest time and finally found a homemade clif bar recipe online, which I tweaked just a little in order to come up with these. Wrap them individually in plastic wrap and you can even put labels with nutrition info if you like.
Boil quinoa, saute red peppers and onions, and toss with cheese and chopped almonds. A great pre or post workout meal, or dinner anytime. Serves 4.
