I put together a couple of recipes using what I had on hand!
Mixed bean soup from my Co-op, no nutrition info so I used similar mix in the database; nice Saturday soup for the crock pot
Plain and simple vegetarian chili. We like the fire roasted Mexican tomatoes
My friend Debbie taught me to make this years ago; so simple it lets itself to many variations - add ham or bacon for instance, maybe cheese or corn.

A Crock Pot dish that is kinda like a vegetarian chili with the corn bread cooked altogether.
This is an adaptation of a recipe I clipped from the newspaper years ago. This crisp topping can be used with 5 cups of any fresh fruit.
Replaced the meat in a light stuffed pepper recipe, the meat eater liked it!!
Simple steam raised breakfast bread - we split them and use butter, and/or jam or sometimes we stuff them with scrambled eggs
My favorite chili made vegetarian - big hit with the meat eaters at work. Who knew?
Lightened up version good for a sandwich, melt or on a cracker
I'm figuring 2 cups/serving because this plain, home-made soup is too good to just have one cup!

The neighbor showed up with Silver Queen corn that I added to my usual potato soup - excellent & filling; Yukon Gold potatoes are really the best
Updated version from Whole Earth Cookbook (out-of print -frozen tofu recipes. I typically eat one half of the block, then freeze the other half for this. Makes it go farther.
I lighted up this old recipe from the McCall's Cookbook (1973) and switched a couple things around - always a winner for my family; there were no tuna pouches and high protein choices back in the day!

My son and I adapted a rhubarb spring pudding recipe. the black berries were quite tart, with sweeter berries, I would cut the sugar down.

Pesto lends itself to many variations; this is my favorite. Walnuts can be substituted for pine nuts and I sometimes use extra fresh partley and marjorum if I don't have 3 cups of basil.
Great Summer Salad; interesting dressing - even the particular white bread, meat eating guy I live with likes this.
The calculator doesn't work well for greens! Actually I gather a dish pan full of swiss chard, beet green and kale our of the garden, the original recipe called for 30 leaves
