Sour Cream and Green Chilies Enchilada Casserole

This is a recipe my mother in law taught me. I lightened it by using fat free Cream of Chicken soup and reduced fat sour cream.

Jen's Banana Nut Muffins

This is my favorite banana bread recipe. It is not particularly healthy, but it is a family favorite. I use egg whites rather than regular eggs; you can also substitute Splenda for the sugar and use whole wheat flour if desired.

Easy, Healthy Cornbread

This is basically the boxed Jiffy Cornbread mix recipe, but I substituted 1/4 cup egg whites and 1/3 cup skim milk to decrease the calories and fat.

Healthier Cornbread

This is basically the boxed Jiffy Cornbread mix recipe, but I substituted 1/4 cup egg whites and 1/3 cup skim milk to decrease the calories and fat.

Easy Chili

This is one of those recipes that can be made very quickly & easily.

Sausage, Potato & Cabbage Meal

This is a simple, one-pot dish my sister-in-law makes. It's satisfying and hearty. I usually serve it with cornbread on the side.

Garlic Parmesan Squash

This is a tasty, fast vegetable side dish that the whole family will love.

Roasted Red Pepper and Green Onion Cream Cheese Spread

This spread is delicious on bagels, wraps, or as a veggie dip.

Roasted Red Pepper Hummus

This dip is awesome with fresh cut veggies, pita chips, or as a spread on sandwiches and wraps. It is loaded with protein and very tasty!

Sugar Free Banana Bread

I transformed my favorite banana banana breed into a sugar free, lower fat version. After making it, I honestly could not tell the difference between the original and the healthy version. It is simple to make and is a perfect "dessert" alternative to satisfy a sweet tooth without breaking the calorie bank. Also, it's the perfect use for overly-ripe bananas that would otherwise be thrown out!
