Chile Rellenos is my favorite Mexican dish, but between the cheese and the deep frying it is SO bad for you. I start with a poblano pepper and stuff it full of healthy goodies for a fresh alternative. The cheese can be replaced with low-fat, and any veggies or protein you like can be substituted; just be sure that everything is chopped into small enough pieces to fit the pepper!
*note: poblanos have a bit of kick to them; it can vary greatly by the pepper, though.
An unusual alternative to pasta or other "picnic" salads. Lots of variety and crunch. Don't let the name fool you--this may not be pretty, but it's delicious! (the nutrition info is slightly off because you only use one of the ramen seasoning packets, not both)
This is not your typical picnic fare. Fresh veggies, chopped chicken, and replacing the typical noodles with a filled pasta make this side dish a well balanced meal on its own! Of course, you can always use any vegetables, protein, or salad dressing you'd like. These are just some of my favorites.
