My kids don't like the peppers, so I usually omit 4 peppers and serve them the rice and beef that has simmered with the 2 peppers in the sauce.
Sodium can be reduced by using fresh Jalapenos and low sodium enchilada sauce. Fat can be reduced by using a low fat cheese.

Cutting a round pizza into 16 slices or using a jelly role pan will help reduce the calories. Also using turkey for the meats cuts the fat and calories considerably.
