Mashed potatoes with a little something extra
Because there is a full serving of protein, dairy, and 3 servings of vegetables per serving, this can be a one dish meal. We usually eat it with a garden salad.
An egg and egg white scramble with bacon pieces, mushrooms, onions, green and red peppers and tater tots.
A quick and easy 1 pot meal
This is a scramble that tries to give the best of both worlds. It uses light sausage, eggs and egg whites, and veggies.
Spinach, Salsa, and Sausage, egg, and cheese on whole grain tortillas.
I make this and freeze half. It makes 16 servings. It can be refridgerated for 4-5 days and tastes wonderful reheated!
