This is a great low fat comfort food. I cook the meatloaves in a muffin tin to make individual portion sizes. It is quick and simple to prepare.
This recipe could be altered many ways depending on your preferences. Add spice with red pepper flakes, chili powder, etc. Made vegetarian by omitting the chicken breast and replace the chicken broth with veggie broth. Recipe could also be made with beef or pork instead of chicken. Pre cut veggies in your grocers deli section and Rotisserie chicken make this recipe quick and easy.
Serve with brown rice or without.
