This is my mother-in-law's simple baked mac & cheese recipe. You can tinker with the milk/cheese amounts (and try reduced fat cheese if you want to drop cals further) and salt/pepper to taste, or try whole wheat pasta.
This is a super easy and delicious chickpea stew that my husband learned to make in Puerto Rico. Yummy over rice, too.
