Light & Bright tomato flavor- SO GOOD. Adapted from Smitten Kitchen- just barely! I subbed 1% for whole milk. & added an extra can of Delmonte stewed tomatoes for extra sauce.
I also am not fussy about crusts.
Holy moly, my husband is a keeper. This recipe is , too~ but just don't eat it very often!

My take on veggie enchiladas~ ugly but tasty!
This was delicious jambalaya~! My husband absolutely Loved it.

This is a modified version of a Lasagna Soup I saw online, it truly was delicious!

A tasty soup that is even better the next day :) For a true vegetarian soup, just sub w Veg stock.
My friend made these with twice the cheddar, & a 1/2 c of butter! I tried making them a little healthier...
This looked really good, & I thought it would be a nice change from my regular chickpea salads...
My daughter's favorite! Made with cottage cheese, you get more protein than Ricotta.
I would also add spinach, sometime.
I always have made my tortilla soup beanless~& I didn't see a recipe listed like that, so I'm adding mine.

Meatballs are best when you use a little pork & veal with your beef~ lighter, too! The hidden secret is fresh grated Pecorino Romano cheese~shhh.
