Delicious low cal cocktail
Light & Bright tomato flavor- SO GOOD. Adapted from Smitten Kitchen- just barely! I subbed 1% for whole milk. & added an extra can of Delmonte stewed tomatoes for extra sauce.
I also am not fussy about crusts.
My mother-in-law's famous meatloaf- & super comfort food for my hubby (& Me!)
Holy moly, my husband is a keeper. This recipe is , too~ but just don't eat it very often!
I modified this recipe -slightly- to make it a little healthier! But it is still decadent!

My take on veggie enchiladas~ ugly but tasty!
This was delicious jambalaya~! My husband absolutely Loved it.

My cousin taught me this recipe, & thus began my love of chopped salads.
My daughter's favorite! Made with cottage cheese, you get more protein than Ricotta.
I would also add spinach, sometime.
I always have made my tortilla soup beanless~& I didn't see a recipe listed like that, so I'm adding mine.

It is mainly vegetarian , omit the bacon to be truly veg.
However, my husband asked for More bacon next time~ so that's what I'll do~! ;-)
