These are perfect to BBQ. I also use this recipe to make meatballs (add an egg and 1/2 cup of breadcrumbs).
A chicken pot pie casserole without the crust. I replaced the usual potatoes with butternut squash.
Red peppers can be substituted with peas, cooked spinach, zucchini, mushrooms or any other vegetable you have in your fridge.
