The quinoa adds protein as well as a chewy texture to this meatless main dish. The heat of the cooked quinoa and mushrooms helps wilt the spinach; the dressing and feta pulls this warm salad together.
The original recipe calls for veal. I used turkey scallops and decreased the butter.
The original recipe calls for 2/3 cup olive oil, but I decreased it to 1/4 cup. I didn't bother to blanch and peel the tomatoes.
