From kraftfoods.com uses low fat mayo or miracle whip to keep fat low but still being very moist. Listed on Kraft foods as diabetic friendly. Great for dessert or brunch/breakfast.
Here is a basic chicken soup. I left out any grains because I like to add different stuff or leave it without. If you really like a grain in your soup, it is great to measure out left over cooked grain (noodle, coucous, rice, etc.) and add it (add it seperately to your calorie counter). The calorie count does not include any grains.
Veggie Pasta Dish - Lots of veggies
Could also toss with cubed cooked chicken breast (chicken not included in nutritional facts)
zucchini and squash can be replaced with other veggies. Okra is very good
A nice alternative to a traditional lettuce salad. Great alone or served on fajitas or asian tacos for an unique flavor. Lactose-free, dairy-free, gluten-free (check your vinegar/lime juice to be sure). Great for picnics because no refridgeration is required.
While still somewhat high in calories, this recipe offers less calories than a full calories version. It also offers more fiber to keep you full. You can also sneak in extra veggies to add more fiber and minimal calories - broccoli, articokes, or spinach is a great choice for this recipe. Sour cream lends creaminess without adding more cheese or ricota (which is not lactose free).

Kid friendly chili (mild and adds extra veggies without kid's knowing)
You can adjust the heat by choosing either mild, medium, or hot chili beans. Recipe is figured with mild.
